Fish heads are nutritious and rich in essential lecithin and unsaturated fatty acids for human. It is good for lowering blood fat, strengthening brain and delaying senility。

Soy braised fish head is the traditional Chinese food. To cook it, first put burdock ginger slices in the pot, and put an appropriate amount of fish pieces and brown mushrooms. After pouring specially prepared soup in, cover the pot with a lid. In the  cooking process, scoop the boiling soup and pour it over the fish to get the pieces all colored.

On the basis of this practice, the people of Tongxiang better the dish by adding  a small amount of shallot, salt, chicken essence, white sugar, wine, hot sauce and other seasonings. Before being served, a small amount of bamboo shoot slices. mushroom slices and so on are placed on the plate. It makes the fish head look bright and taste delicious. The flavour of the fish lingers.
